‘Veganuary’ is a UK non-profit organisation that encourages people to go vegan for the month of January as a way to promote and educate about a vegan lifestyle. Since the event began in 2014 participation has more than doubled each year.
As with all diets though, unless your partner or another family member is also following it too, it can prove challenging to commit to. With this in mind, we have tried and tested the best vegan recipes of family favourites, so you can embrace Veganuary united.
1. Vegan Shepherd’s Pie
Using lentils instead of lamb, this classic winter dish is the perfect comfort food on a cold Winter’s day. Lighter than the traditional meat recipe, with a hint of spice, it is a hearty weekday dinner that can be eaten with or without veg.
2. Tasty Vegan Lasagne
This vegan twist on the Italian family favourite is indeed ‘tasty’ as the recipe name suggests. Despite the main ingredient being mushrooms, which aren’t always a hit with little ones, it is a nice alternative to the traditional beef dish.
3. Cheese Burger Mac & Cheese
For a Saturday night treat, this cheesy recipe is sure to be a hit with all of the family. The ground-beef style crumbles create the perfect texture amongst the creamy sauce; creating a truly satisfying supper sans animal products!
4. Vegan Chilli
This simple chilli recipe is super speedy and packed full of goodness. Served with a jacket potato or steamed rice, it is a great all-rounder that can be served for lunch or an evening meal.
5. Banana Bread
This yummy loaf is a healthier alternative to shop-bought cakes, as well as ticking the Vegan box. It works as a perfect post dinner treat or can be enjoyed anytime as a healthy snack.
