Mouth-watering summer recipes

At long last, the summer has arrived, and after another year of restrictions due to Covid-19, alfresco dining with family and friends is just the tonic that we need.

BBQs are the obvious go to for summer gatherings, but there are some delicious dishes that can be rustled up in the kitchen.

Here is a selection of recipes making us salivate as we type:

Beetroot & halloumi salad with pomegranate and dill

This is a nice one to try for lunch or a light supper. The salty halloumi combined with the sweet beetroot and pomegranate sounds like a match made in heaven. It also looks so pretty on the plate!

Italian bread salad

If you like tomatoes, then this Panzanella (Tuscan tomato & bread salad) is worth a try. The ciabatta crotons will also help to ease you into eating salads again after a long winter of lunching on soup and sandwiches.

Linguine with lemon, Garlic and Thyme mushrooms

This pasta dish looks simple yet flavoursome. The perfect weekday lunch or dinner that would be nice served with a leafy salad and garlic bread.

Seabass with tomato and butter bean ragout

If you are looking for a summer dinner party recipe, then look no further. Most of this meal can be prepared in advance. And, if you wanted to, you could cook the fish on the BBQ.

Courgette and potato cakes with mint and feta cheese

These potato cakes would be nice served for a light lunch or snack. Feta and mint are such a lovely seasonal combination too.
